PENGEMBANGAN PEMPEK LENJER SUMBER SERAT DENGAN SUBSTITUSI TEPUNG TAPIOKA (MANIHOT ESCULENTA) DAN TEPUNG KULIT PISANG KEPOK (MUSA PARADISIACA L) SEBAGAI MAKANAN ALTERNATIF REMAJA (13-18 TAHUN)
Employing a laboratory experimental design with a Completely Randomized Design (CRD), this research utilized four formulations: F0 (control), F1 (10%), F2 (20%), and F3 (30%). Organoleptic properties were evaluated by 30 untrained panelists using a hedonic test, while crude fiber content was analyzed through the Gravimetric method. The test data were statistically processed using non-parametric Kruskal-Wallis followed by Mann-Whitney tests. The statistical results indicated that the
substitution had a significant effect on color (p=0.010) and taste (p=0.003) parameters but did not significantly alter aroma (p=0.148) and texture (p=0.199) attributes. Based on overall acceptance, the F1 formulation achieved the highest score at 3.79 (Liked), followed by F2 at 3.74 (Liked). Laboratory analysis revealed that crude fiber content increased along side higher substitution concentrations, yielding 3.05% for F1, 5.15% for F2, and 8.37% for F3. The F1 formulation was determined as the best treatment because it provided high crude fiber retention that meets BPOM criteria as a "source of fiber" while successfully maintaining sensory quality characteristics favored by adolescents, making it potential as a healthy alternative snack.
