Results showed all three formulations were well accepted, with color obtaining the highest mean scores (4.47-4.50). No significant differences were found among formulations for color, taste, and texture (p>0.05), but a significant difference was found for aroma (p=0.037). Formulation F2 was
the most balanced in taste and color. The highest iron content was found in F1 at 8.27 mg/kg (0.827 mg/100 g), followed by F2 at 7.09 mg/kg and F3 at 6.02 mg/kg, indicating that higher orange juice proportions led to lower iron content. The contribution to the daily Recommended Dietary Allowance (RDA) of iron per 100 g of product ranged from 3.34% to 4.59%. It is concluded that beetroot gummy candy with orange juice is sensorially acceptable and potentially serves as a functional snack supporting anemia prevention, with Formulation 2 recommended as the optimal formulation for further development.
