This study employed a quasi-experimental design with a one-group pre-test and post-test approach. The sample consisted of 19 pregnant women with CED selected using total sampling. Data were collected through hedonic testing, Mid-Upper Arm Circumference (MUAC) measurements, and hemoglobin (Hb) assessments. Data were analyzed using the Paired Sample t-test.
The results showed that formulation F0 had the highest level of acceptability. The mean MUAC increased from 22.47 cm to 23.96 cm, while the mean Hb level increased from 10.34 g/dL to 13.00 g/dL after the intervention. Statistical analysis indicated a significant effect of purple taro and mung bean cookie supplementation on MUAC and Hb levels (p = 0.000). It can be concluded that purple taro and mung
bean cookies were well accepted and effective in improving the nutritional status of pregnant women with Chronic Energy Deficiency.
